It came out with king oyster mushrooms next to thick raw short rib. The marbling is vivid even before it goes on the grill.
At the table of Hanpan Chamsut Sogalbi (Charcoal Beef Short Ribs) - Guro Digital Branch, thick raw short ribs and mushrooms are piled high on a large tray. The portion looks really generous.
The yukgaejang included as a side dish has tender meat in it.
The short ribs grill to a golden brown. In the middle is a sauce meant for dipping the bone portion of the ribs, which seemed to be a sesame-based sauce with chopped scallions.
This is the odeuregi that comes as a side dish. They say it's tasty if lightly grilled, but honestly, I didn't notice much beyond its crunchy texture.
This is the nicely grilled beef short rib meat. It was seriously so delicious.
The grilled short rib was meant to be briefly dipped in the scallion broth in the pot to cook once more, but it turned out too tough. Maybe it was because I left it in too long.
It was tougher than expected.
Next to a large bone-in rib, bite-sized pieces are grilled side by side on the grill. With careful heat control, they cooked up crispy on the outside and juicy on the inside.
Cutting into a piece of nicely grilled short rib at Hanpan Chamsut Sogalbi (Charcoal Beef Short Ribs) - Guro Digital Branch reveals a cross-section cooked evenly all the way through. It's great placed on lettuce and eaten wrapped.
On the wall of Hanpan Chamsut Sogalbi (Charcoal Beef Short Ribs) - Guro Digital Branch, there's a sign for an ultra-special-price set that bundles beef short ribs, raw chaesal, and usamgyeop. We ordered it as an extra.
Short ribs, chaesal, and usamgyeop — multiple cuts are piled generously on one plate. The vivid marbling stands out and builds anticipation for grilling.
Since it was delicious, we got a refill.
A piece of nicely grilled meat and a fatty cut are placed together in a bowl of dark sauce. The seasoning soaked into the meat adds a savory depth.
After grilling and eating the meat, this sweet and tangy kimchi mari guksu is served as a palate cleanser. I was surprised the noodles were chewier than expected.
On the charcoal grill, the richly marbled chaesal slowly cooks. Its vivid color and grain are clearly visible.

This is Hanpan Chamsut Sogalbi (Charcoal Beef Short Ribs) - Guro Digital Branch, which I found near Guro Digital Complex, South Korea.

It was my friend's birthday, so I decided to splurge and treat them to beef.

This place is known for its charcoal-grilled aged beef short ribs, served as either a large portion (1kg) or a small portion (600g). We ordered the large portion, and in the middle of the meal, an ultra-special-price set as well. It's also introduced as a place where you can try a special cut called odeuregi. The meat tasted just like you'd imagine beef to taste, but it was really tender and full of juice. As soon as we took a bite, we immediately said, "Wow, this is really good." We also really enjoyed the chaesal (flat iron steak) and usamgyeop (beef belly).

The atmosphere is known to attract a lot of company dinners and group gatherings, so it can be somewhat lively and noisy in the evening. We went in around 7:30 PM, and the restaurant was nearly full. Fortunately there wasn't a wait, and it was a relief that the restaurant had a lot of seating.

There's talk that you might have to wait if you go without a reservation, so it's a good idea to check whether reservations are available before visiting. Rather than a dedicated parking lot, you may need to use a nearby paid (public) parking lot, so if you're driving, I'd recommend checking the parking information in advance. The price for two people came to about 120,000 won. I expected 1kg to be a lot, but since there were two adult men eating quickly, and maybe because the bones weighed more than expected, it wasn't enough, so we even placed an additional order.

If I have the time and want to taste beef short ribs again later, I'd like to visit once more.
